This very tasty goulash is adapted from the Volumetrics recipe of the same name. It goes very well with a whole wheat pasta or a hearty piece of crusty bread.

Recipe Ingredients for Old World Goulash

2 tbsp cooking wine
2 tbsp cornstarch
1 tbsp olive oil
1 pound beef, round roast, lean
1/2 tsp salt
1/4 tsp pepper
1 cup onion
1 tsp garlic
2 cups bell pepper, diced
1 cup beef broth, nonfat, low sodium
2 cups potatoes, chopped
2 cups carrots, chopped
1 cup celery, chopped
12 oz green beans, chopped
2 tbsp paprika
1/2 tsp thyme

Recipe Directions for Old World Goulash

  1. In a pot, cube and cook beef with wine

  2. add vegetables, spices, and broth and simmer for 2 hours.
