Breakfast finger food with a taste of the old west - quiche with hash brown style potatoes, bacon, green peppers, mushrooms and spinach, with tasty spices and a bread crumb and cheddar cheese crust - YUM for less than 70 calories each!

Recipe Ingredients for Old West Quiche

3 large eggs
3/4 cups Fit & Active Egg substitute
1/4 cup skim milk
28 g (1/4 cup) imitation bacon bits
3/4 tsp Italian seasonings
3/4 tsp onion powder
1/2 tsp garlic powder
3/8 tsp crushed red pepper
1/4 tsp dill
1 tbl chives
4 oz fresh mushrooms, chopped
2 oz green peppers, chopped
1/2 tbl light butter
6 oz frozen hash brown potatoes, thawed & gently squeezed dry
4 oz frozen spinach, thawed & squeezed dry
60 g (1/2 cup) fat free sour cream
1/4 cup bread crumbs, Italian
84 g (1 cup) reduced fat shredded cheddar cheese,divided

Recipe Directions for Old West Quiche

  1. Preheat oven to 350-degrees.

  2. In a medium bowl, combine eggs, egg substitute, skim milk, bacon bits, and seasonings, and beat until well-blended, set aside.

  3. Put chopped mushrooms and green peppers in microwave-safe bowl with light butter and microwave until tender (about 50 seconds on 50% power). Drain any liquids from bowl.

  4. In large bowl, combine mushrooms, green peppers, potatoes, spinach, and sour cream, mix well. Add egg mixture and mix until well-blended.

  5. Spray 9 X 9-inch baking dish with non-stick cooking spray. Sprinkle bread crumbs evenly over bottom of dish. Sprinkle 3/4 cups cheese evenly over bread crumbs.

  6. Stir mixture once more and pour over cheese and gently spread over bottom of dish. Bake for 25 minutes. Remove pan from oven, sprinkle remaining cheese over top, return pan to oven and cook for an additional 5 minutes or until toothpick inserted in center comes out clean.

  7. Let cool at least 10 minutes. Cut into 16 triangles and serve. NOTE: to cut into triangles, cut quiche into 4 equal squares. Cut an "X" in each square to make 16 triangles. AS AN APPETIZER: cut each triangle in half for 32 appetizer-sized triangles.
