Recipe Ingredients for Old Fashioned Vegetable Soup

1 T olive oil
2 carrots
1 onion
1/4 cup celery
2 red potatoes
1 turnip
6 cups vegetable broth
1 1/2 cups beans
2 T parsley leaves

Recipe Directions for Old Fashioned Vegetable Soup

Saute onion, carrot and celery in oil. Add remaining ingredients except parsley and simmer for 1 hour. Add parsley, simmer for 5 more minutes. Serve.
