Easy but very rich...only for special ocassions. From the Doubleday Cookbook.

Recipe Ingredients for Old Fashioned Southern Pecan Pie

1 1/4 cups flour, sifted
1/2 teaspoon salt
1/3 cup vegetable shortening, chilled
1/4 cup water, iced
1 cup pecan halves
1 pound light brown sugar
1/4 cup flour, unsifted
1/2 teaspoon salt
1/2 cup milk
1 1/2 teaspoon vanilla
3 eggs
1/2 cup melted butter or margarine

Recipe Directions for Old Fashioned Southern Pecan Pie

  1. Preheat oven to 325 degrees.

  2. Make pastry from first 4 ingredients and fit into a 9" pie pan; do not bake.

  3. Arrange pecans in concentric circles over the bottom of the pastry. Blend sugar, flour, and salt in a large mixing bowl; then mix in milk and vanilla. Beat in eggs, one at a time, using a wire whisk or beater; mix in butter, a little at a time. Pour filling over pecans.

  4. Bake pie 1 hour and 15 minutes or until filling is puffy and crust is golden. Serve at room temperature.
