Recipe Ingredients for Old Fashioned Orange Cake

1 cup orange
1 cup raisins
1 cup sugar
1/2 cup butter
2 eggs
3/4 c lowfat buttermilk
2 cups flour
1/2 tsp baking powder
1 tsp baking soda
1 tsp cinnamon
1/2 cup walnuts
2/3 cup powdered sugar
2 tbsp lowfat buttermilk

Recipe Directions for Old Fashioned Orange Cake

  1. Chop oranges and raisins and combine.

  2. Cream sugar and butter then add eggs and buttermilk.

  3. Combine dry ingredients then add to wet.

  4. Add all but 2 Tbs of raisins and orange mixture.

  5. Top with 1/2 cup walnuts

  6. Bake at 325 for 30-40 minutes.

  7. Meantime, mix remaining 2 Tbs raisins with powdered sugar and 2 Tbs buttermilk. Glaze cake with this mixture. Serve @ room temp.

  8. Refrigerate cake when cool, warm when serving (if desired).
