Grandma Hayes' traditional fruitcake

Recipe Ingredients for Old-Fashioned Light Fruitcake

1 1/2 lbs pecan halves
3/4 lb chopped pineapple
3/4 lb candied cherries
1 lb white raisins
1 cups butter
2 1/4 cups sugar
6 Eggs
1 ounce brandy flavoring
4 cups flour
1 1/2 tsp cinnamon
1 tsp salt
1 tsp nutmeg
2 tbsp light corn syrup

Recipe Directions for Old-Fashioned Light Fruitcake

  1. Line a 10 x 4" tube pan with foil. Have nuts and fruits ready. Do not chop, reserving some to decorate cake top.

  2. In large bowl, using electric mixer, mix butter, sugar, eggs, and flavoring together.

  3. Sift dry ingredients together. Mix with egg mixture and add nuts and fruit. Add batter to prepared tube pan. Bake at 275 for 3 hours.

  4. Approximately 1/2 hour before cake is done, brush top with light corn syrup. Decorate with reserved fruits and nuts, pressing down firmly. Return cake to oven and finish baking. Cool cake completely. Remove from pan-peel off foil. Store in airtight container for several weeks.
