adapted from prevention's slow cooker recipe book; I halved the recipe but kept the same amounts of vegetables.

Recipe Ingredients for Old-fashioned lentil soup

32 oz chicken broth
1/2 lb dry lentils, rinsed and drained
1 1/2 cup onion, chopped
1 1/2 cup carrots, chopped
1 cup celery, chopped
1/4 cup extra virgin olive oil
2 tbsp garlic, minced
2 tsp italian seasoning

Recipe Directions for Old-fashioned lentil soup

  1. coat slow cooker with nonstick cooking spray.

  2. add all ingredients into cooker and stir.

  3. cover and cook on low 7-8 hours, or on high 3.5 to 4 hours.
