Recipe Ingredients for Old-Fashioned Cream of Celery Soup

1 cup onion, minced
1 tablespoon canola oil
2 tablespoons wholewheat flour
5 1/2 cups water
1/3 cup soymilk
4 cups celery, diced
2 cups potatoes, peeled and diced
3 tablespoons miso
1 clove garlic, minced
1 Fresh pepper to taste

Recipe Directions for Old-Fashioned Cream of Celery Soup

  1. In a medium soup pot, heat onion with oil and saute for 2 minutes, stirring. Add flour and stir well. Slowly add 2 cups water, stirring to avoid lumping. Bring to a boil and stir until thick and smooth.

  2. Combine the soymilk and remaining water. Add to soup pot and bring to a boil. Add celery and potatoes, return soup to a boil, and simmer 15 minutes or until the celery is very tender. Remove 1 cup of broth from mixture and dissove miso in it, then return to soup pot and stir well.

  3. Puree 1/2 of the mixture with a hand blender or food processor. Return puree to soup and stir well. Pepper to taste.
