Thick hearty stew that can be made with a variety of fresh or frozen veggies. The original recipe called for beef but to cut calories I have used chicken. I have also made it with lean pork and added a variety of veggies. I have even doubled up on the tomato paste for a stronger tomato flavor. Very adaptable recipe.

Recipe Ingredients for Old Fashioned Chicken Stew

1 pound chicken breast, cut in 1 inch cubes
2 tbsp all-purpose flour
2 tsp olive oil
3 cups onions, thinly sliced
2 cups mushrooms, halved or thick sliced
2 cloves garlic, minced
2 tbsp tomato paste
2 cups chicken broth
4 cups carrots, sliced
2 medium potatoes, sliced
1 cup green beans, one inch pieces
1 tbsp cornstarch
1 tbsp water
1/4 cup parsley, fine chopped

Recipe Directions for Old Fashioned Chicken Stew

  1. Coat chicken with flour, shaking off excess. In large nonstick pot, heat oil and add chicken: saute about 6 minutes or until almost cooked. Remove from pot and place on plate.

  2. Add onions and mushrooms to pot: saute for 6 minutes. Add garlic: saute, stirring for 1 minute. Return chicken to pot and stir in tomato paste, then broth. Add enough water to just cover: bring to boil. Reduce heat to low: simmer for about 1 hour.

  3. Add carrots, potatoes and beans. Cover partially: simmer until veggies are just tender ( not too soft )

  4. In a small bowl, mix corn starch and 1 tbsp water: stir into stew. Increase heat and boil uncovered for 1 minute. Sprinkle with parsley and serve.
