Recipe Ingredients for old-fashioned blueberry muffins

8 oz almond breeze
1/4 cup butter
1/4 cup unsweetened applesauce
1 1/2 tsp orange zest
2 eggs
1 tsp vanilla extract
1 cup flour
1 cup whole wheat flour
3/4 cup sugar
2 1/2 tsp baking powder
1/4 tsp salt
1 1/3 cups blueberries

Recipe Directions for old-fashioned blueberry muffins

  1. Preheat oven to 400. Line 12 muffin cup with paper liners. COmbine milk, butter, orange peel, and vanilla in a heavy small saucepan. Stir until butter melts. Cool until just slightly warm. Whisk in eggs and applesauce.

  2. Sift flour, sugar, baking powder, and salt into large bowl. Add milk mixture and stir until blended. Fold in blueberries. Divide batter among muffin cups. Bake until golden - 20 min.
