Stew for a LARGE slow-cooker. For a smaller slow-cooker, cut recipe by 1/2 or 1/3. Good stuff!!! And Simple to make. I typically make it without the small onions, turnips and okra -- and it's still wonderful!! From Crockery Cookery, Mable Hoffman, 1975. Makes 8 2Cup servings

Recipe Ingredients for Old-fashioned beef stew

2 lbs beef stew meat, cut into 1 1/2 inch pieces
3/4 cup flour, all-purpose
2 T olive oil
1/4 oz bay leaves, use 2-3 whole leaves
1 T Worcestershire sauce
1 onion, chopped
1 1/2 c beef broth, Swanson, lower sodium
1/4 tsp pepper
2 tsp salt
1 tsp sugar
6 carrots, peeled and sliced/quartered
1 cup sliced celery
4 medium Russet Potatoes, peeled and cut into eighths or less
4 c water
12 small white onions (optional)
2 medium turnips, peeled and quartered (optional)
1 cup cooked okra (optional)

Recipe Directions for Old-fashioned beef stew

  1. Coat meat with flour, set excess flour aside

  2. In large skillet or slow-cooking pot with browning unit, heat oil

  3. Brown meat on all sides.

  4. In slow-cooking pot, combine browned beef, bay leaf, Worcestershire sauce, chopped ionin, buillon, pepper, salt, sugar and vegetables (except okra)

  5. Pour water over all

  6. Cover and cook on low 8 to 10 hours

  7. When complete, Turn control on high

  8. Thicken with flour left over from coating (about 1/4 cup) disolved in a small amount of water.

  9. Add okra if desired.

  10. Cover and cook on high 10 to 15 minutes or until slightly thickened
