Ceviche-like Shrimp & Tomato Salad

Recipe Ingredients for Old Bay Shrimp Stuffed Tomatoes

100 g shrimp
2 c water
1/4 c apple cider vinegar
2 T Old Bay Seasoning
1 tomato
1 tsp Juice
1 T parsley
1 T onion (chopped)
1 T garlic (chopped)
1 salt & pepper to taste
1/2 tsp tabasco (optional)

Recipe Directions for Old Bay Shrimp Stuffed Tomatoes

  1. Add water, apple cider vinegar, seafood seasoning and shrimp to saucepan over MED-HI heat.

  2. Let water come to slow boil. When shrimp start floating, remove from heat & drain.

  3. Chill in refrigerator until cooled.

  4. Place cooked shrimp in food processor. Pulse a few times to chop up shrimp. Or, simply chop with sharp knife.

  5. In small bowl, combine chopped shrimp, chopped onion, diced garlic, parsley, lime juice, salt/pepper.

  6. Cut off top of tomato. Scoop out inside of tomato.

  7. Chop & combine inside of tomato with shrimp mix.

  8. Cover and refrigerate 30 mins-1 hr.

  9. When ready to serve, fill tomato with shrimp mix.

  10. Top with a couple dashes of tabasco (optional) and serve.
