Recipe Ingredients for Okrashka (Summer Borscht)

400 g cucumbers, diced
300 g red beets, boiled and grated
540 g white potatoes, boiled and diced
180 g hot dogs, boiled and diced
1 1/2 tablespoons of salt
60 g green onions, diced
2 boiled eggs, diced
6 cups of water
1 (220g) fresh radishes, diced
1 cup sour cream
40 g parsley
40 g dill

Recipe Directions for Okrashka (Summer Borscht)

  1. Boil red beets for 25 minutes in enough water to cover them.

  2. Boil white potatoes for 25 minutes in just enough water to cover them.

  3. Boil hot dogs for 7 minutes in just enough water to cover them.

  4. Boil eggs for 7 minutes in just enough water to cover them.

  5. Allow all cooked ingredients to cool enough that they may be handled.

  6. Dice cucumbers, radishes, green onions, parsley, and dill. Place in a large pot to mix.

  7. Dice the cooled potatoes, boiled eggs, and hot dogs. Grate the beets.

  8. Mix all of the ingredients with 1 tablespoon of salt.

  9. Add 1/2 cup of sour cream and continue mixing until the ingredients are coated. If more sour cream is desired add the other 1/2 cup.

  10. Add water and mix well.

  11. Taste and if needed add the 1/2 tablespoon of salt.

  12. Refrigerate for an hour and serve chilled.
