Recipe Ingredients for Okra & Tomatoes with chicken

1 tbsp oil (or bacon drippings)
590 g okra, sliced in rounds
230 g onion, diced
160 g green pepper, diced
160 g celery, diced
1 clove garlic, minced
822 g diced tomatoes
580 g chicken thigh
1 tsp cajun seasoning

Recipe Directions for Okra & Tomatoes with chicken

  1. Saute diced onions in 1 Tbsp of bacon drippings or oil in a large skillet or pot.

  2. When onions become translucent, add celery, peppers, garlic and okra, saute for about 5 minutes longer.

  3. Add tomatoes, chicken and seasoning bring to a boil, then reduce heat and simmer, covered, about 25-30 minutes.
