A midwestern adaptation of an Indian recipe. The pepper can be a hotter pepper if you prefer. But I am a wimp, what can I say.

Recipe Ingredients for Okra with Potatoes

1 lb Okra
1 large onion
2 cup Hash Browns
4 tbsp olive oil
2 banana peppers
1/2 tsp turmeric powder

Recipe Directions for Okra with Potatoes

Wash Okra, remove tops and tails. Slice in about 4 slices each. Dry very thoroughly with paper towels. Slice onion thin and separate rings. Slice peppers. In large fry pan heat oil on medium heat. Add onions and potatoes and fry until lightly browned. Salt to taste. Add tumeric then Okra. Cook uncovered about 20 minutes.
