A Sri Lankan curry starring okra. Normally it calls for 1 1/2 cups of coconut milk, but I've cut it with with whole milk to back off the saturated fats. Serve with rice, dhal, and pappadam for a real feast!

Recipe Ingredients for Okra Bean Curry (Bandakka Curry)

8 oz okra, sliced
1/2 tsp turmeric
2 tbsp canola oil
6 oz onion, finely chopped
1/2 oz green chilies, seeded and sliced
3 tsp curry powder
1/2 tsp salt
1/2 cup coconut milk
1 cup whole milk

Recipe Directions for Okra Bean Curry (Bandakka Curry)

  1. Wash okra, cut off tops, then slice diagonally into bite-size pieces. Rub with turmeric.

  2. Heat oil in small frying pan and fry the okra until lightly browned. Drain well and pat dry.

  3. Place all other ingredients into a saucepan and simmer, uncovered, until onions are cooked, about 10 minutes.

  4. Add the okra, simmer until tender and remove from heat.

  5. Enjoy a taste of Sri Lanka!
