Okara Muffins Recipe

A good way to use up all that okra (soy bean fibre) left over from making your own soy milk.

Recipe Ingredients for Okara Muffins

1/2 cup soy milk
1 cup Tofu, Okara
1/3 cup canola oil
1 tsp vanilla
1/2 cup yogurt
1 cup grated carrots
1 cup unbleached flour
1/2 cup whole wheat flour
1/4 cup yellow corn meal
1 tsp cinnamon
1/4 tsp nutmeg
1/4 tsp ginger
1/2 tsp salt
1/3 cup brown sugar, packed
1 tsp baking powder
1 tsp baking soda
1/2 cup walnuts, chopped
1/2 cup raisins, chopped

Recipe Directions for Okara Muffins

  1. Mix all dry ingredients together in a bow.

  2. Mix all liquid ingredients together in a bowl.

  3. Add wet to dry ingredients and mix. (Don't over mix!)

  4. Preheat oven to 375F.

  5. Fill 18 muffin cups 2/3 full.

  6. Bake for 25-30 min. until lightly browned. Cool for 10 min.

  7. Makes 1-1/2 dozen.
