On a strict diet with no vinegar and no oil, this is great for a salad dressing.

Recipe Ingredients for Oil-less Italian dressing

1/2 cup red bell pepper
1 cup celery root
1/2 cup apple
1/8 cup onion
1 clove garlic
1 cup fresh parsley
1/4 cup fresh thyme
2 tsp salt
1 tsp italian seasoning
1/2 cup sunflower seed
2 cups water

Recipe Directions for Oil-less Italian dressing

Blend everything up in the Vita-Mix until very smooth.
