This recipe was give to me by a friend, and it is VERY good

Recipe Ingredients for OHVI Roasted Beet Salad

6 Beets
2 cup Beet leaves
2 large Oranges
1 small Sweet Onion
1/3 cup Red Wine Vinegar
1/4 cup Extra-Virgin Olive Oil
2 Garlic Cloves, minced
1/2 tsp. grated Orange Peel

Recipe Directions for OHVI Roasted Beet Salad

  1. Preheat oven to 400F.

  2. Trim Greens from Beets, cutting off and discarding the stems.

  3. Coarsely chop leaves and reserve.

  4. Wrap each Beet in foil. Place either directly on oven rack or on a cookie sheet (in case of leaks) and roast until tneder when pierced w/fork (about 1 hour 30 minutes) and cool.

  5. Peel Beets, and cut into 8 wedges (cut in half (2), half again(4) and so on).

  6. Place Beets in medium bowl.

  7. Cook Beet Greens in large saucepain of boiling water just until tender (about 2 minutes). Drain. Cool. Squeeze Greens to remove excess moisture. Add Greens to bowl w/Beets.

  8. Grate Orange peel. Set aside.

  9. Peel Orange. Cut peel and white pith away from orange. Working over another bowl and using a small sharp knife, cut between membranges to release the Orange segments.

  10. Add Orange segments to and Onion slices to Beets and Greens.

  11. In another bowl, whisk vinegar, oil, garlic and grated orange peel in a small bowl to blend; add to beet mixture and toss to coat. Season w/ground black pepper and let stand at room temp for 1 hour (helps meld flavors).

  12. Serve.
