Oden-Aji Fried Rice Recipe

Recipe Ingredients for Oden-Aji Fried Rice

3 cups of rice
1 cup enoki mushrooms, chopped
1/2 cup carrot, peel shreds
1/3 cup edamame
1/2 cup tofu, cut into 1 inch strips
1/2 medium onion, chopped
2 tablespoons soy sauce
1 tablespoon mirin
1 teaspoon salt
1 teaspoon garlic powder
1 dash pepper

Recipe Directions for Oden-Aji Fried Rice

  1. This idea was inspired by my recent rice-cooker oden creation and the fact that, once it was all devoured, I was left with about two cups of broth in the rice cooker (as well as scraps of vegetables floating about).

  2. With two cups of broth left over, you can easily add two cups of un-cooked rice and yield about 3 cups of cooked rice.

  3. Once the rice is cooked, chop the vegetables and add some goma oil to a frying pan and heat on medium-low (about a min).

  4. First add the onions to the pan and cook those for 2 minutes before adding the mushrooms, age-tofu, edamame, and carrots to the pan.

  5. Fry everything for five minutes before adding the three cups of cooked rice. Turn the heat up to medium and begin to fold the vegetables into the rice.

  6. Once everything is well mixed, add the soy sauce, mirin, salt and garlic powder.

  7. Fry the entire mixture for another 5 minutes before finishing.
