Quick with nice spicy, taste. Use one can of chunked chicken breast.

Recipe Ingredients for Odd chicken & Couscous

12 oz. chicken breast
1 cup chopped onion
1 cup diced carrot
4 oz. mushrooms
1/2 cup chopped walnuts
1/2 tsp. salt
1 tablespoon curry powder
15 1/2 oz baby butter beans
6 oz. tomato paste
1/2 cup raisins
1 1/2 cup chicken broth

Recipe Directions for Odd chicken & Couscous

  1. Saute onion, carrots, mushrooms, walnuts, salt and curry powder.

  2. Add can of butter beans or garbanzo beans), tomato paste, raisins and chicken broth.

  3. Simmer until carrots are soft.

  4. Serve over Whole Wheat couscous.

  5. Couscous = 190 calories per cooked 3/4 cup
