Austrian coffee cake / dessert cake with fruit or your choice.

Recipe Ingredients for Obst Kuchen

1 cup butter or margarine
1 cup sugar
3/4 cup sugar
3 eggs
1 tablespoon lemon juice
5 tsp baking powder (heaping if you like it fluffy, flat if you like it dense)
1/4 l milk
4 cup all purpose flour
1 1/2 cups blueberries (or any other favorite fruit)

Recipe Directions for Obst Kuchen

  1. beat butter and sugar until fluffy. add eggs one at a time. Mix rest of ingredients (except fruit) well and spread on cookie sheet, leaving space to rise. Layer top with choice of fruit (sliced apples, cherries, pears, plumbs, blueberries, peaches, mandarine oranges, ect.)

  2. Bake 350 degrees until toothpick inserted in center comes out clean. Let cool then cut into squares to serve.

  3. This can be made ahead of time and frozen. Makes a whole cookie sheet, so good for brunches or gatherings.
