Oaxaca Lentils with Beef Chuck Roast

Recipe Ingredients for Oaxacan-Style Lentils with Beef

454 grams Lentils, Mature Seeds
10 Glass Water
10 clove Garlic
2 medium White Onion
2 cup, diced Pineapple
3 medium whole (2-3/5" dia) Tomatoes, Red, Ripe
0.5 tsp Cloves, Ground
1 tsp Allspice, Ground
1 lb Beef, Chuck, Clod Roast

Recipe Directions for Oaxacan-Style Lentils with Beef

  1. Place the lentils in a large pot with the water, half the garlic and half the onion. Bring to a boil, cover, and cook over medium heat for 30 minutes, or until lentils are tender. Season with salt to taste.

  2. Heat the oil in a medium saucepan and saute the remaining onions and garlic until the onion begins to soften. Add the plantains, pineapple and tomatoes and continue to cook until the plantains soften.

  3. Add the spices, lentils, and some of their cooking liquid. Continue cooking until the mixture thickens, adding more cooking liquid as necessary.

  4. Serve in bowls, garnished with fried slices of plantain if desired. Serves 6-8.
