Recipe Ingredients for Oaty Pancakes with Blueberries

2 serving (Fresh Meadow) Irish Organic Eggs
50 grams Porridge Oats Scottish Breakfast Cereal
50 grams Flour
1 tsp Cinnamon, Ground
150 mL (Arla) Lactofree half fat milk
150 grams Blueberries

Recipe Directions for Oaty Pancakes with Blueberries

  1. Whisk eggs whites until stiff.

  2. In a separate bowl mix flour, oats, egg yolks, cinnamon, milk and a pinch of sweetener.

  3. Fold egg whites under this mixture, try to maintain as much fluffiness as possible.

  4. Fry in a non-stick pan, use fry light better than butter spray to greese.

  5. In a separate bowl gently heat blueberries with 150ml water and one tablespoon of sweetener. Stirr and let break down.

  6. Serve warm. This gives 3 pancakes for 2 people each.
