Recipe Ingredients for Oaty Banana Cookies

150 g flour
1/2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
28 g unsalted butter
112 g sugar
88 g brown sugar
1 medium banana
1 medium egg
1 tsp vanilla extract
135 g oats
50 g chocolate chips (optional)

Recipe Directions for Oaty Banana Cookies

  1. Preheat oven to 350F, 175C, 155C Fan. and line baking sheet with baking parchment.

  2. Seive the flour, baking powder, baking soda and salt together.

  3. In another bowl, cream the sugars with the butter, then beat in the mashed banana, followed by the egg and vanilla extract.

  4. Gradually add in the flour mixture, then stir in the oats and choc chips, if using.

  5. Drop tablespoons of mixture onto baking sheet and bake for 10-14 minutes, until set and lightly browned.

  6. Allow to cool for 5 minutes then transfer to wire rack to cool comletely. Store in airtight container.
