Recipe Ingredients for Oats and Crème Brûlée

4 c water
1 c oats, steel-cut
2 c half-and-half
1/3 c sugar
4 egg yolks
1 t vanilla
2 T butter
1/2 c brown sugar

Recipe Directions for Oats and Crème Brûlée

  1. Brown-sugar brûlée crust. On a sheet of foil, set an 8" x 12" oval casserole (should be at least 2-1/2" deep.) Gently trace around the base with a pencil, being careful not to rip the foil.

  2. Coat area within outline with butter. Set foil on a 12" x 15" baking sheet (without side.) Sprinkle brown sugar evenly over the butter.

  3. Bake in a 500-degree oven until the sugar begins to melt and bubble (some sugar does not have to melt,) 2 to 5 minutes, rotating pan to melt sugar evenly. Let crust cool. Cover tightly with plastic wrap if keeping over night.

  4. Oats and Crème. In a 1-1/2 to 2-quart pan, combine water and oats. Bring to a boil over high heat. Simmer, uncovered until oats are tender to bite and liquid is absorbed, about 30 minutes; stir occasionally. Pour oats into the casserole dish. Set casserole dish in a larger pan.

  5. In the pan used to cook the oats, combine cream and sugar to taste. Stir frequently over medium heat until scalding.

  6. Beat yolks and vanilla in a bowl with a little of the hot cream. Stir mixture into pan, then pour over oats. Set pans on center rack in a 325-degree oven. Pour boiling water into out pan to level of custard. Bake until custard jiggles only slightly in center when gently shaken, about 45 minutes. At once, lift from water.

  7. With 2 wide spatulas or your fingers, gently trasfer brown-sugar crust onto custard; if custard breaks, fit together on top.
