Just as delicious as they are healthy. When available, replace mixed dry fruits with fresh cranberries or blue berries or whatever fruit is available

Recipe Ingredients for oatmeal yoghurt muffins

170 g plain flour
1 1/2 tsp baking powder
1/2 tsp salt
85 g rolled oats
1/2 tsp bicarbonate of soda
1 large egg
110 g soft brown sugar
90 ml sunflower oil
110 g mixed dried fruits
300 g (Lidl) Proviact natural yoghurt
61 g British Semi-skimmed milk

Recipe Directions for oatmeal yoghurt muffins

  1. Prepare muffin tins.

  2. Preheat oven to 190-200 degree celsius.

  3. Sift together flour, baking powder; add the oats and salt.

  4. In a separate bowl mix yoghurt, bicarbonate of soda, milk, beaten egg, sugar and oil well with spoon.

  5. Add the dry ingredients to the wet mixture and mix gently until just combined and no dry flour is showing.

  6. During the final strokes add the fruits.

  7. The batter will be thick and lumpy.

  8. Spoon immediately into the cases, mixture will make 10-12.

  9. Bake for 20-25 minutes until tops are lightly brown and spring back when touched
