Hearty, whole wheat pancakes with the nutritional advantage of oats built right in! My guests LOVE these. You may add fresh blueberries or reconstituted dried cherries, if desired. If using cherries, substitute almond extract for the vanilla extract.

Recipe Ingredients for Oatmeal Whole Wheat Pancakes from Tucker House B&B

1 cup oats
3/4 cup unbleached flour
3/4 cup whole wheat flour
2 1/2 tsp. baking powder
1/2 tsp. salt
2 large eggs
2 cups lowfat buttermilk
2 tbsp. brown sugar
6 tbsp. melted butter
1 tsp. vanilla

Recipe Directions for Oatmeal Whole Wheat Pancakes from Tucker House B&B

  1. In a medium mixing bowl, melt butter in microwave; allow to cool somewhat and add eggs, buttermilk and brown sugar. Mix well.

  2. In a large mixing bowl, place all dry ingredients (oats, flours, baking powder and salt) and whisk together.

  3. Pour the wet ingredients into the dry ingredients and mix well.

  4. Allow the ixture to sit for 5 minutes (or longer) before placing the batter on the griddle; using a 1/4 cup measure, dollop batter onto preheated, lightly greased griddle. Turn only once! Yield: 16 pancakes
