Recipe Ingredients for Oatmeal Whole Wheat Pancake Mix from Mel's Kitchen

3 1/2 cups Whole Grain Oat Flour
5 cups whole wheat flour
2 tablespoons flax seed meal
2 tablespoons wheat bran
3 tablespoons brown sugar
3 tablespoons baking powder
1 tablespoon salt
1 tablespoon baking soda
1 cup canola oil
1/2 cup low fat yogurt
1/2 cup low fat milk
1 egg

Recipe Directions for Oatmeal Whole Wheat Pancake Mix from Mel's Kitchen

  1. Grind the whole oats. Add to the other dry ingredients and mix well.

  2. Add the oil slowly with a hand mixer. Squeeze the mix in your hand and if it keeps its shape, it's ready.

  3. Combine the yogurt, milk and egg.

  4. Add the yogurt mixture to 1 cup of the dry mix and oil.

  5. Allow to sit for 5 to 10 minutes while the griddle heats up. This will allow the batter to thicken.

  6. Makes 4 4" pancakes.
