Recipe Ingredients for Oatmeal Walnut Cookie

1/2 c. canola oil
1/2 c. unsweetened applesauce
1/3 c. Organic Sucanat
3 large egg whites
3/4 tsp vanilla extract
6 tbsp water
2 c. rolled oats
2/3 c whole wheat flour
1/4 tsp sea salt
1/2 tsp baking soda
3/4 c. raw chopped walnuts
1 tsp ground cinnamon
2 scoops vanilla whey protein powder

Recipe Directions for Oatmeal Walnut Cookie

  1. Preheat Oven to 350F.

  2. Line baking sheets with parchment or waxed paper. In a bowl mix oil, applesauce and sucanat. Add egg white, vanilla , and water - mix thoroughly. Add remaining ingredients (note you can use raisins instead of walnuts) just until blended.

  3. Drop by teaspoonfuls onto parchment paper. Bake for 10 - 15 minutes or until bottoms are lightly browned.

  4. Makes 3 dozen cookies
