Ingredients:
3 bananas
1 3/4 c. whole wheat flour
1 1/4 tsp. baking powder
3/4 tsp. salt
1/2 tsp. baking soda
1/2 c. applesauce
2/3 c. sugar
2 eggs
1 c. oats
1 c. walnuts
1 tsp. cooking spray
2 tsp. honey

Recipe Directions for Oatmeal Walnut Banana Bread

  1. First things first: Grab all ingredients needed. This makes for quick and easy preparation. Preheat the oven so that by the time you are done mixing, the oven is ready. Now, out of the cupboard and into a medium sized bowl, sift together the flour, salt, baking powder and baking soda. Once sifted, set aside. Then in another medium sized bowl, mash three to four bananas and set aside. In a large mixing bowl, beat the applesauce and sugar until light and fluffy. Add the eggs and beat until smooth. Now add the bananas and flour mix, stirring just enough to combine thoroughly. Add nuts and oatmeal, again mixing only to combine.

  2. Turn batter into a greased loaf pan and bake for one hour at 350 degrees. Once finished, loosen loaf around the edges and shake onto a cooling rack. Let cool for a couple of minutes while pouring some tea, coffee or juice, then slice and enjoy.

  3. This simple, affordable, and tasty recipe takes only an hour and a half to prepare, bake and clean up. Not to mention oatmeal walnut banana bread makes for a great breakfast, lunch or snack on the go.
