Oatmeal Waffles Recipe

A favorite my mom always makes when I go home to visit, but I've modified it to accommodate my food allergies

Recipe Ingredients for Oatmeal Waffles

1 egg
1 1/2 c quick oats
1 tsp baking powder
1 tbsp honey
3/4 c lite soy milk
3 tbsp ghee

Recipe Directions for Oatmeal Waffles

  1. Beat egg whites in a small bowl until stiff and set aside

  2. Mix together dry ingredients and set aside

  3. Combine egg yolk, milk and melted butter

  4. Add to dry ingredients, mix until just blended

  5. Fold in beaten egg white until just mixed

  6. Heat up waffle iron

  7. Once the iron is hot and you are ready to pour in the batter, spray iron with canola oil, then dab with remaining butter, top and bottom (fyi: pour batter in now or butter/oil may burn/smoke)

  8. A hot iron produces the best results, waffles may tend to stick if the iron cools down

  9. Do not open the iron for at least 1-1/2 minute, opening to soon will cause the waffles to split, top from bottom

  10. Pour batter into HOT IRON, bake until done, longer for crispier waffles

  11. Tip from Mom: with my waffle iron it takes about 3-4 minutes before I even open it, then I just peak and see if they are near done
