Makes 10 servings



Hearty whole grain waffles, modified from a Reiman Publications recipe. Can also be used to make pancakes, of course. If you like your waffles crispy, pop them into the toaster for a few minutes before eating.

Recipe Ingredients for Oatmeal Waffles

4 large eggs
2 cups low-fat buttermilk
2 cups skim milk
2 cups quick-cooking oats
3 tablespoons brown sugar
3 tablespoons canola oil
1 cup Gold Medal whole wheat flour
1 cup all-purpose flour
1 teaspoon salt
2 teaspoons baking soda
1 tablespoon baking powder

Recipe Directions for Oatmeal Waffles

  1. Combine liquid ingredients in large bowl.

  2. Combine and add dry ingredients and mix thoroughly.

  3. Allow batter to rest for 10 minutes.

  4. Drop by 1/2 cupfuls onto hot waffle iron and bake.
