I heard about oatmeal souffle and had to do a small search to find a workable low-fat recipe. This was pretty good - a little trouble to make, so it's more a weekend morning brunch kind of thing, but it's fun for something different.

Recipe Ingredients for Oatmeal Souffle

1 cup skim milk
2 tbs butter
3/4 cup oats (quick cook)
3 eggs (separated)
1/4 cup raisins
1/4 cup Chopped Pecans
1/4 cup low fat cream cheese
1/3 cup brown sugar
1/2 tsp salt
1/2 tsp nutmeg
1/2 tsp cinnamon

Recipe Directions for Oatmeal Souffle

  1. Preheat Oven to 325

  2. Butter 6 small ramekins or 1 souffle dish

  3. Pour milk and butter into small saucepan, heat until barely boiling.

  4. Add oatmeal. Stir until thick.

  5. Remove from heat, add cream cheese, brown sugar, salt, cinnamon, and nutmeg. Stir briskly to blend and smooth.

  6. Beat egg yolks slightly and add to oatmeal mixture.

  7. Stir in raisins and nuts.

  8. Beat egg whites until stiff. Gently fold whites into mixture until evenly distributed.

  9. Spoon into dish or ramekins. Bake. Large dish 30-45 minutes, small ramekins 10-12 minutes. Should turn rich brown with a rising, souffle-like appearance.
