Yeast bread rolls. Soft and slightly sweet.

Recipe Ingredients for oatmeal rolls

1 cup Oatmeal
3 tablespoons butter or margarien, softened
2 cups boiling water
4 1/2 teaspoons yeast
2/3 cup brown sugar
1 tablespoon white sugar
1 1/2 teaspoons salt
5 cups all purpose flour

Recipe Directions for oatmeal rolls

  1. In large bowl, pour boiling water over the oats and butter. Stir, set aside and prepare the yeast.

  2. Using a 2 cup measuring cup or med. size bowl.

  3. Add 1/3 cup fairly warm water (not boiling or you will kill the yeast).

  4. Add 1 talblespoon white sugar.

  5. Add the yeast, stir until yeast is dissolved.

  6. Let set a few minutes.

  7. Within a few minutes the yeast will begin to rise and grow or "proof". This assures the yeast is healthy and your bread will rise.

  8. ***The yeast will foam over the top of the cup fairly quickly so watch closely***

  9. While the yeast is "proofing" mix 1-2 cups of flour into the oatmeal and water mixture in large bowl.

  10. Add the dissolved yeast mixture to the flour oatmeal mixture.

  11. Mix together the reamining 3 cups of flour and the

  12. 1 1/2 teaspoons of salt.

  13. Add this additional flour to the oatmeal mixture using about 1/2 cup of flour at a time.

  14. This mixture will become fairly stiff.

  15. You may need to pour mixture on a floured bread board and knead the remaining flour into the dough until combined. When all of the flour is incorporated, roll the dough into a smooth ball.

  16. Lightly grease a large bowl. Place dough ball into bowl and turn once to coat the dough. Cover the bowl with a clean dry towel and let rise in a warm draft free place for 1 hour ( the oven or micro wave works great). The dough should double in size.

  17. Lightly flour a bread board. I divide the dough ball in half.

  18. Place 1/2 the dough onto the work surface.

  19. Punch down.

  20. Form into rolls.

  21. Place in a greased baking pans.

  22. Cover rolls with a clean towel, and place in a draft free warm place for 20-30 minutes, until almost double in size.

  23. Preheat oven to 350.

  24. Just before baking I like to brush rolls with heavy cream or milk to enhance browning.

  25. Bake for 20-30 minutes.
