Recipe Ingredients for Oatmeal Raisin Pecan Cookies

1 1/2 cups pecans
2 sticks butter, room temperature
1 cup brown sugar
1 cup sugar
2 eggs, room temperature
2 tsp vanilla
1 tsp kosher salt
1 tsp cinnamon
1 tsp baking powder
1 1/2 cups flour
3 cups rolled oats
1 1/2 cups raisins

Recipe Directions for Oatmeal Raisin Pecan Cookies

  1. Preheat oven to 350 degrees.

  2. Place pecans on baking sheet and toast in oven for 5 minutes. Set aside to cool, then coarsely chop.

  3. In a stand mixer with paddle attachment, cream together the butter and sugars on medium high speed until creamy. Turn to slow and add eggs one at a time, and then vanilla.

  4. Sift together the flour, salt, cinnamon and baking powder in a bowl. With mixer running on slow speed, add the flour mixture slowly to the wet ingredients until combined.

  5. Add oats, pecans and raisins and mix until just combined.

  6. Drop in 2 inch mounds on parchment lined baking sheets using a tablespoon or small ice cream scoop. Flatten mounds with a dampened palm.

  7. Bake for 12-15 minutes until golden brown.

  8. Remove to cooling racks and allow to cool completely.
