Oats and whole-wheat pastry flour give these cookies a wonderfully chewy texture. For added crunch there are pecans and almonds. Dried fruits add natural sweetness.

Recipe Ingredients for Oatmeal-Raisin & Nut Cookies

1/2 c applesauce
1/3 c brown sugar
2 tbsp honey
1 large egg
1 tsp vanilla extract
3 c rolled oats
1 c whole-wheat pastry flour
3/4 tsp cinnamon
1 tsp baking powder
1/8 tsp salt
1 c raisins
1/4 c pecans, coarsely chopped
1 c soymilk
1 banana

Recipe Directions for Oatmeal-Raisin & Nut Cookies

  1. Preheat oven to 350F

  2. Combine first three ingredients in a large bowl and beat at medium speed with a mixer to blend. Stir in egg and vanilla extract.

  3. Spoon oats into small bowl. Add flour, cinnamon, baking powder, salt. stirring well with a whisk. Add oat and flour mixture to oil mixture; beat well. Stir in raisins, pecans, and almonds. Place dough in refrigerator for 30 minutes to chill.

  4. Spoon heaping tablespoons of dough onto a nonstick cookie sheet and flatten gently with fingers. Bake at 350F for 10-12 minutes until lightly browned. Let cookies cool on sheet for 2 minutes; transfer to wire racks and cool completely.
