Recipe Ingredients for Oatmeal Raisin Muffins

1 cup Rolled Oats
1 cup Milk, 1%
2 teaspoons Vinegar
1/2 cup White Flour
1/2 cup Whole Wheat Flour
1 tablespoon Ground Flax Seed
1 teaspoon Cinnamon
1 teaspoon Baking Powder
1/2 teaspoon Baking Soda
1/2 teaspoon Salt
1/2 cup Raisins
0.33 cup Vegetable Oil
0.33 cup Brown Sugar
1 Egg

Recipe Directions for Oatmeal Raisin Muffins

  1. Stir rolled oats into soured milk and let stand for 10 minutes.

  2. MIx together flour, flax, cinnamon, baking powder, baking soda, salt and raisins. Still oil, sugar and egg into buttermilk mixture; blend well. Stir dry ingredients into buttermilk mixture, stirring just until combined.

  3. Spoon batter into tins. Bake at 375 for 20-25 mins.
