Recipe Ingredients for Oatmeal Raisin Muffins

1 cup rolled oats
1/2 cup milk
1/2 T vinegar
1/2 cup applesauce
3/4 cup flour
1/2 teaspoon baking powder
1/2 teaspoon salt
3/4 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon nutmeg
6 tablespoons butter, melted
2 eggs, lightly beaten
1/3 cup brown sugar
1/3 cup raisins

Recipe Directions for Oatmeal Raisin Muffins

Combine milk and vinegar. Let sit 5 mins. Mix in apple sauce and oats and allow to sit for a half hour or so. Preheat oven to 400 degrees. In large mixing bowl, combine flour, baking powder, salt, baking soda, cinnamon, and nutmeg. Stir in brown sugar, coconut oil (or butter), and eggs. Fold in yogurt/oat mixture. Fold in raisins. Batter should be quite thick, but if it?s too difficult to work with, feel free to stir in up to two tablespoons of milk. Spoon into greased muffin tins. Bake for 20 minutes.
