Recipe Ingredients for Oatmeal Raisin Cookies

1 cup raisins, half chopped fine, half left whole
3/4 cup water
6 tbs margarine
1 3/4 cups old fashioned oats
1 1/2 tsp ground cinnamon
1 cup all purpose flour
1/3 cup Designer Whey, chocolate
1/4 tsp baking soda
1/4 tsp baking powder
1/2 tsp salt
1 1/2 cups SPLENDA Brown Sugar
1 large egg
2 tsp vanilla extract

Recipe Directions for Oatmeal Raisin Cookies

  1. Preheat oven to 350 degree F.

  2. Plump Raisins. Combine chopped raisins in water in small saucepan and bring to boil. Reduce heat to simmer and cook until most of the water has evaporated and raisins are plump, about 15 minutes.

  3. Toast oats. Melt margarine in large skillet over medium heat. Cook oats, stirring often, until just golden, about 5 minutes. Stir in cinnamon and cook 30 seconds; let cool.

  4. Combine flour, baking powder, baking soda, and salt in medium bowl. In separate large bowl, combine sugar, egg, and vanilla. Whisk until smooth. Stir in raisins, oat mixture, and flour mixture until just combined. Do not over mix.

  5. Roll 2 tbs dough into balls and place 2 inches apart on baking sheets lined with parchment (or lightly greased with spray cooking oil). Press balls down until they are 1/2 inch thick. Bake until edges are starting to turn brown and centers are just barely set, 13 - 16 minutes.

  6. Cool 10 minutes on baking sheets, then transfer to wire rack(s) for final cooling before storage. Store in airtight container, serve warm or at room temperature.
