Recipe Ingredients for Oatmeal Raisin Cookies

1 1/2 cups whole wheat flour
1/2 cup brown sugar
1 tsp cinnamon
3/4 tsp baking soda
1/2 tsp salt
3/4 cup applesauce
2 bananas, mashed
1/4 cup rice milk
3/4 cup raisins
1 cup walnuts
1/2 cup flaxseed meal
1/2 cup dried coconut
1 1/4 cups oats

Recipe Directions for Oatmeal Raisin Cookies

Mix dry ingredients together in large bowl, and liquids including applesauce and bananas in another smaller bowl. Add wet to dry, then add walnuts and raisins. Portion cookies using an ice cream scoop (approx. 2 tbsp) onto greased cookie sheet, leaving at least 1/2 inch space. Bake 10-12 minutes.
