Recipe Ingredients for Oatmeal Raisin Chocolate Chip Cookie-Low Satfat

2 cups oats, rolled
1/2 cup flour, whole wheat
1/2 cup flour, all purpose
1/2 tsp baking soda
1/2 tsp salt, kosher or sea
1/2 cup peanut butter, natural, smooth
3 1/2 tbsp oil, canola
2/3 cup sugar, granulated
2/3 cup sugar, light brown, packed
2 large egg whites
1 tbsp vanilla extract
2/3 cup chocolate chips, mini, semi-sweet
1/2 cup raisins, golden
1/2 cup walnuts, chopped

Recipe Directions for Oatmeal Raisin Chocolate Chip Cookie-Low Satfat

  1. Heat oven to 350

  2. In med bowl, combine oats, flours, soda and salt

  3. In large bowl blend peanut butter and oil with a mixer

  4. Add sugars, eggwhites, and vanilla, blending after each addition

  5. Add oat mixture, choc chips, raisins and walnuts

  6. Blend - might seem dry - keep working until it comes together.

  7. Scoop 1 Tbsp with damp hands, roll in ball - place on sprayed non-stick cookie sheet - flatten slightly - place two inches apart

  8. Bake 12-14 minutes - allow to cool one minute before moving to wire rack.

  9. Yield: 4 dozen cookies
