Recipe Ingredients for Oatmeal Pumpkin Muffins

1/2 cup pumpkin
1/4 cup brown sugar
2/3 cup rolled oatmeal
1/4 cup applesauce
1/2 tablespoon ground flax seed
1 cup whole wheat flour
1 teaspoon baking powder
1 teaspoon ground cinnamon
1/4 teaspoon salt
1/2 teaspoon baking soda
1/2 teaspoon fat free milk
2 teaspoons honey

Recipe Directions for Oatmeal Pumpkin Muffins

  1. Combine pumpkin, sugar, applesauce, and flax seeds. In a separate bowl, stir together flour, baking powder, ground cinnamon, and salt. Dissolve the baking soda with the milk and stir in. Add flour mixture to pumpkin mixture and mix well.

  2. Drop into greased muffin pan and drizzle with honey. Bake at 375 degrees F (175 degrees C) for approximately 15 minutes or until firm.
