Low-sugar (relatively) oatmeal cookies made with pumpkin. Choc. chips and walnuts added but could be optional to reduce calories.

Recipe Ingredients for Oatmeal pumpkin choc chip cookies

16 oz. canned pumpkin
1/2 cup brown sugar
2 large eggs
1 1/2 cups flour
1 tsp baking soda
1 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp cloves
3 cups rolled oats
6 oz. semi-sweet chocolate chips
1/2 cup chopped walnuts

Recipe Directions for Oatmeal pumpkin choc chip cookies

Mix pumpkin and brown sugar. Then mix in eggs. Then add remaining ingredients mixing well. Using my cookie sheets, I can fit 15 on one sheet (3 x 5 rows) and 20 on the other (4 x 5 rows) to make a total of 35 cookies. The cookies will not change shape much after baking so consider that when spooning onto sheet. Bake 18-20 minutes @ 350 degrees.
