Recipe Ingredients for Oatmeal Pudding Cookies

1 1/4 c. flour
1 tsp. baking soda
1 c. light margarine
3/4 c. brown sugar
3 2/5 oz. vanilla instant pudding mix
2 eggs
2 1/2 c. rolled oats
1 c. coconut
1 c. walnuts
1 T. ground flax seed

Recipe Directions for Oatmeal Pudding Cookies

  1. Preheat oven to 375 degrees.

  2. Mix flour with the baking soda; set aside.

  3. In a separate bowl, combine margarine, brown sugar, and pudding mix; beat until smooth. Beat in eggs.

  4. Gradually add in flour mixture, then stir in oats, coconut, walnuts, and ground flax seed. Batter will be stiff.

  5. Roll dough into walnut size balls; place on ungreased cookie sheet or parchment paper. Flatten a little. Bake @ 375 degrees for 10-12 minutes.
