A great "On the Go" Breakfast with plenty of protein, carbs and fiber. I reheat mine in the toaster oven.

Recipe Ingredients for Oatmeal Protein Muffins

2 cups oats
1 cup milk
8 oz plain greek yogurt
1 cup unsweetened apple sauce
2 eggs
70 g (2 scoops) protein powder
1 cup blueberries
2 g Stevia
2 teaspoons cinnamon
1/2 tablespoon molasses
1 teaspoon baking powder
1/2 teaspoon salt

Recipe Directions for Oatmeal Protein Muffins

  1. 1. Preheat oven to 350 degrees F.

  2. 2. Combine all ingredients in a medium bowl and mix thoroughly.

  3. 3. Grease a 12 cup muffin pan and spoon batter into pans approximately 3/4's full.

  4. 4. Bake for 20 - 30 minutes checking for browning.

  5. 5. Let rest 10 minutes and then store in airtight container in refrigerator.
