Fantastically tasty cookies! Splenda may be used in place of brown sugar. Just add 1/2 cup to 3/4 cup.

Recipe Ingredients for Oatmeal peanut butter chocolate chip cookies

2/3 cup peanut butter
4 tablespoons butter
1 cup brown sugar
1 teaspoon vanilla
1/2 teaspoon salt
1/4 teaspoon baking soda
2 large eggs
1 cup old fashioned oats, ground
1 1/2 cups old fashioned oats
3/4 cup chocolate chips

Recipe Directions for Oatmeal peanut butter chocolate chip cookies

  1. Preheat oven to 350F.

  2. Lightly grease 2 baking sheets or line with parchment paper.

  3. Cream the peanut butter, butter, sugar, vanilla, salt and baking soda in a medium bowl.

  4. Beat in the eggs, scraping the bowl once they're incorporated, then ground oats, old fashioned rolled oats and chocolate chips.

  5. Drop the dough by tablespoonfuls onto the prepared baking sheets. (They don't spread much.).

  6. Bake the cookies, reversing the pans midway through (top to bottom, bottom to top), until they're barely set and just beginning to brown around the edges, 11-13 minutes.

  7. Remove the cookies from the oven and let them cool completely on the pans.
