I took this oatmeal pancakes recipe and changed it to make it a bit healthier. Milk and lemon juice is used to substitute buttermilk, whole wheat flour replaces all purpose flour, and applesauce replaces oil and sugar.

Recipe Ingredients for Oatmeal Pancakes

3/4 cup Oats, Regular And Quick And Instant, Unenriched
1/2 cup Whole Wheat Flour
1 dash Salt, Table
3/4 cup Milk, Reduced Fat, Fluid, 2% Milkfat
1 large Egg, Whole
1 teaspoon Baking Powder
1/4 cup applesauce
1/2 teaspoon Baking Soda
1 tbsp Lemon Juice, Canned Or Bottled

Recipe Directions for Oatmeal Pancakes

  1. Mix together the milk and lemon juice. In a large bowl mix together all ingredients. Add a dash of cinnamon, if desired.

  2. Heat a skillet to medium high heat. Pour approximately 1/4 cup of the batter for each cake.
