Heart healthy pancakes, fluffier than most recipes due to the addition of stiff egg whites.

Recipe Ingredients for Oatmeal Pancakes

1/3 cup Whole Grain Oat Flour
1/3 cup oats
1/2 cup milk
1 tsp. baking powder
1 1/2 tbsp. oil
1 egg whites, beaten
1 egg yolk

Recipe Directions for Oatmeal Pancakes

  1. In a small saucepan heat milk until hot; stir in oats; let stand for 5 minutes. In a mixing bowl combine oat flour, sugar, baking powder. Add oat-milk mixture. In a small bowl, combine egg yolks and cooking oil; add all at once to flour oat mixture, stirring just till combined. In another bowl beat egg whites until stiff peaks form, fold into the batter. For each pancake, pour about 1/4 cup of batter on a hot, lightly greased griddle or pan. Cook till golden brown, turning to cook other side when pancake has a bubbly surface and slightly dry edges.

  2. Makes 12 pancakes.
