Came up with these one day when i got bored of eating oatmeal for breakfast, but wanted something that would still be clean healthy and fun. prep time 5- 10 minutes (no blender required) makes 2 large thick and filling oatmeal pancakes

Recipe Ingredients for Oatmeal pancakes

35 grams dry oatmeal
10 grams of whole wheat flour
50 grams of egg whites
75 ml skim milk
25 ml water (optional)
1 tsp baking powder
1 tsp vanilla
1 tsp Cinnamon

Recipe Directions for Oatmeal pancakes

  1. grind oatmeal with a coffee grinder to form oatmeal flour (good idea to grind a bunch and store in container for later use)

  2. mix all dry ingredients into a bowl and add the egg whites then whisk with a fork, and add the milk, and water if desired. (batter might be a bit runny but its ok)

  3. cook just as would when cooking a regular pancakes, flipping when bubbles start to form (recommend using a small pan no stick fry pan so batter can stay compact and pancakes come out more fluffy)

  4. serve with sugar free syrup, fruit, peanut butter, etc...

  5. complete meal with scrambled egg whites or an omelet, or with any other source of desired lean protein
